I have been attempting an ungodly amount of recipes (and temps, ingredients, amounts, etc) trying to locate the PERFECT chewy, chocolate (or blonde) Puffed Wheat Squares, for 9 months now!!! Seriously it’s been months of agonizingly failed attempts (a couple were entirely inedible due to how firm they were - I didn’t want broken teeth!), others didn’t have enough syrup to cereal, some had too much syrup, a few didn’t hold together (still tastes great, but was more like chocolate sugar crisp cereal).<br />Needless to say, I absolutely will be trying both of these recipes that you’ve shared (and seemingly perfected) today! <br />Puffed Wheat Squares are (IMO) a healthier snack option, inexpensive, and fairly easy treat that has been my favourite, since the eighties. For some reason most stores in my area only carry toasted puffed wheat now and believe me it makes a big difference! No matter how your sauce turns out your puffed wheat will be too hard and crunchy if you use toasted puffed wheat. Make sure to buy just regular puffed wheat! Puffed wheat squares must be very dark, with lots of molasses and chocolate flavour (regional variation maybe-central Saskatchewan?). So I always replace a bit of syrup with molasses and add more cocoa. If I were going to really go nuts with it I might replace a bit of the butter with cocoa butter (and a bit of water as with the peanut butter above). I'm confident in my flavours, but I don't have a thermometer, so I always struggle with the texture. This recipe worked well, with the molasses added of course, but I didn't have golden syrup--will purchase and try again.
